Vegetable Biryani
Description:
Vegetable Biryani is a fragrant and colorful Indian rice dish that combines aromatic basmati rice with a medley of mixed vegetables and a blend of spices.
It's known for its enticing aroma and vibrant flavors.
The dish is often garnished with fried onions, fresh herbs, and served with cooling raita (yogurt sauce).
Ingredients required:
- 2 cups basmati rice, soaked and drained
- 2 cups mixed vegetables (e.g., carrots, peas, bell peppers, beans)
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons biryani spice mix
- 1/4 cup plain yogurt
- 2 tablespoons ghee (clarified butter)
- 1/4 cup fried onions (store-bought or homemade)
- Fresh cilantro and mint leaves for garnish
- Salt to taste
Steps:
- Heat ghee in a large pot over medium heat. Add sliced onions and sauté until golden brown.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Stir in biryani spice mix and yogurt. Cook for a few minutes until the oil starts to separate.
- Add the mixed vegetables and cook for 5-7 minutes.
- Layer the soaked rice over the vegetable mixture. Pour in enough water to cover the rice by about an inch. Add salt to taste.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Garnish with fried onions, cilantro, and mint leaves. Serve hot with raita.
